Vinification:
Pure Sorbara grapes vinified according to the Ancestral Method. The best bunches are selected and hand picked from our vineyard located in Nonantola in Via Rebecchi 72. After a soft crushing, takes place the first fermentation at a controlled temperature. The taking of froth happens by in-bottle natural refermentation thanks to the inner residual sugars

The elegant complexity makes every bottle an unique experience, ideal for the ones looking to rediscover a wine with a rétro style and handcrafted touch. Not being performed any disgorging, the residual yeasts inside the bottle create the so-called bottom, which gives the wine aromas of bread crust and contribute to leave this wine slightly turbid.
